Poached Thai style Chicken & salad...

Made this up the other night to use the 1st & last Wombok that us Humans got of the crop....
Every one of the others were found to have been inhabited with various creepy crawlies as well as some slithering slimy guests...The Chooks got a good feed from them so all is good.....

Poached Thai style Chicken & salad...

Poaching the Chicken...
  • 3 large Chook thighs, cut into large pieces
  • 1 can light Coconut Cream + same can filled with water & 1 tsp of Chicken Stock
  • 1 stalk of Lemongrass, chopped
  • 3cm piece of Galangal, Sliced thinly
  • ½ Spanish/Purple Onion, chopped
  • 2 large cloves of Garlic, crushed
Place the above ingredients into a pot & bring to the boil then slowly simmer for 15 minutes..
Allow to cool...



 Salad....

 For the salad I used

 - Wombok Cabbage, sliced by an Expert 
- Handful of beans, Sliced thinly
- ½ a red Capsicum, diced
- 2 Carrots, julienned
- ½ Spanish onion, sliced thinly
-  Basil, chopped
- Cucumber, sliced thinly

Toss the Wombok, Carrot, Beans, Capsicum together & plate up...
Slice the Poached Chicken & place on top..
Garnish with Onions & Basil... I kept the Cucumber to the side to help cool the mouth in case of Chilli overdose in the warm dressing.... : )»
Dressings...

I made 2 simple dressings...
Warm Dressing was made by stirring in 2 heaped tsp of Chilli paste to the poaching liquid then warming through.... B☼ & I  poured this over the salad & found it excellent & full of flavour.....

The cold dressing was made with,
½ a block of Palm sugar, crushed
about 2 tsp of Sesame oil
1/8 cup of Rice Vinegar
& the leftover Lemongrass chopped finely...

Pour into a container & SHAKE !!!!!



 The Girls loved the cold dressing & had the leftover salad & dressing for lunch the next day....

Made up another  MEGA batch of Zucchini & Veggie sauce again today.... We had 4 big Zucchini & added a few grated Carrots from the fridge this time as we have heaps of Baby Carrots being picked at the moment.....

Choc chip, M&M & Macca Biscuits...

This is a recipe from a forgotten Country Cookery book with a few additions...
Nutty Choc Chip "Cookies"... 


3/4 cup packed Brown Sugar
1/2 cup White sugar
2 eggs
1 cup/250g softened butter
2 tsp Vanilla
2 1/4 cup flour
1 tsp Baking soda
1/2 tsp salt
3/4 cup of oats
1 cup of nuts. I use Maccadamia.
250 g of Choc chips, or 375 what ever feels right....
I also added about ½ cup of M&M's that were found hidden in the pantry...


Pre heat oven to 180°C
- Beat Butter, sugars, eggs & Vanilla for about 2-3 min
- Add flour, salt, Baking soda & mix
- Mix in Oats Choc, nuts & any other "additives" by hand....
Bake 9-12 min....

I did 1/3 of the batch without Nuts as Koo isn't to fond of them & I don't like soggy seconds..... : p»

Flooding at Colleges Crossing....

Went to drop off the Vanilla Sweetener & pinch a trailer today so thought I would walk the girls down to Colleges crossing to have a look at the flood waters....

Have been told that we can expect more rain & have heard that we may have a flood as big as 1974...
That may be an exaggeration  but you never know....
At least I would get to build the garden all over again..

Yesterday in the Kitchen....

Yesterday we used up all the Zucchinis we picked the other day  by making some bulk Zucchini & tomato sauce....  
Please note that I make recipes up as I go even when I am supposed to be following one.... ; )»
No 2 batches of sauce are ever the same....
                                                               Zucchini Sauce....



  • 3 medium onions Cut in ½ then sliced thinly
  • 4 large cloves of Garlic crushed
  •  Approximately 1 kg of Zucchini sliced lengthways then into 1.5cm chunks
  • 500grams of Mushrooms chopped
  • 3x 400g tins of diced tomatoes
  • 375g jar of tomato paste
  • 1 Tbsp dried Oregano
  • ½ tsp Dried Thyme
  • 2 tsp dried Basil
  • 300g jar of grilled Peppers chopped (I ran out of time & capsicum to make my own so raided the pantry)
- Cook off onions & garlic in some oil (We use Rice Bran due to the high smoke point & added health benefits)
- Add mushrooms & Zucchini.. Cook for 5 minutes stirring occasionally so as not to burn 
- Add the tins of Tomato, paste, roasted Capsicum, dried herbs & bring to the boil for 5 minutes
- Simmer for 2 hours to reduce liquid..

This made up 2.8 Kg of sauce which I split into 4 lots... from this we can split a lot in ½ to use as a sauce or a whole bag as a base for a main meal..


I blitz it with the stick blender to use as a Bolognese sauce base, as a chunky sauce on sausages or steak, mixed through some pasta with extra flavourings then topped with cheese/bread crumb mix as a pasta bake, & B's Favourite, a sauce for a Chicken Parmigiana with Colby or Wauchope (Just a friendly reminder MUM !!! : )») cheese  grilled on top.....

 Also made a very tasty stuffed Zucchini for dinner..... (Don't faint Mum)

                                                      Stuffed Zucchini/Marrow...
  • 1 Large Zucchini Halved Sliced length ways & seeds scooped out (Feed to the worms)
  • 3 slices of Shortcut Bacon Diced Finely
  •  2 small-Medium onions Diced finely
  • 300 g of mushroom Diced small
  • 2 large cloves of Garlic Crushed
  • 1 stalk of Celery Diced finely
  • ¼ red Capsicum Diced Finely
  • 2 Tblsp Tomato paste (didn't use the Tomatoes)
  • 400g of Beef mince (Pork or Sausage would be just as good me thinks)
  • Master Foods African Spice blend (You can use your favourite Spice or herb blend)
  • Grated cheese
- Bake sliced Zucchini halves in oven at 180°C for 20 Minutes.. I checked after 10 just to make certain that it didn't go to soft..
- Fry off Onion, Garlic, Mushroom & Bacon until most of the Mushroom liquid has evaporated..
- Add Celery, Capsicum, Tomato paste & mince..
- Add Spice/Herb mix to taste & cook until mice is browned..
- Take Zucchini from oven & remove any pooled Liquid...
- Stuff Zucchini with mixture, top with grated Cheese n& grill until browned.
Enjoy...... We did !!!

You could easily turn this into a vegetarian recipe by using Eggs, Rice, Quinoa or even oats if desired.....
Next one I make will be a Vego one with Quinoa, Olives, sundried Tomato slithers Danish Feta & Spinach....


Also made up a batch of Vanilla Sweetener for my Sister.. She has been trapped at home for nearly a month with multiple cases of Chicken Pox & is the only one not to fall ill so far...
I think she needs a pick me up (Bit of an understatement there me thinks) & know how she loves her Vanilla Coffee....
                                                      Vanilla Sweetener...

4 beans were sliced lengthways & their seeds were scraped out & placed in a Mini Blender with about ¼ cup of Xylotol.. (I did the same with white sugar for myself)
That was Blitzed until the seeds were evenly distributed through the Xylotol..


The mix was then removed & stirred through the remaining sweetener & placed back in the jar along with the pods... Best to leave it for a few weeks to let the flavour spread through the Sweetener..                 This was dropped off with some extra beans for her to play with...
I couldn't wait & have already used some in coffee for B☼ & Myself.... Subtle but still Lush...
I got the beans from a supplier on eBay... 250g of Madagascan Beans for $39 delivered... There are larger volumes available that make it cheaper if you use it a lot... I will be Buying some Vodka & experimenting with making our own essence in the near future....

Looks like new !!!

Well nearly.......
Finally got the roof painted in anticipation of getting the solar panels up before December....
Was quite a few thousand dollars cheaper than the first few quote we got last year yet the Tradesman used top quality paints & did the same amount of prep work as the other 2 Tradesmen had in their quote....

The rest of the house will be painted over the next few years buy us, 1 section at a time.... Would be nice to get the back deck & extra room done first but would really like to knock as much off the house we can before we go down that path....

Icing Sugar...

I have pinched this from My Simple Savings Blog.....
Bit slack I know...... : )»
 We now make all our own Icing & castor sugar for baking.... Just was silly having the extra containers taking up space in our pantry....
It is really easy to make as all I do is just "wizzz" up 3/4 of a cup of white sugar at a time until it reaches the right consistency... A little Bullet blender or Mini Food processor are great for this job.... I do find there is always a few grains remain but they are easy enough to Sieve out if desired...

Home brand White Sugar works out at .88c per KG when bought in 3kg bag...
Icing sugar (not mixture) works out at $2-3 per KG.... Not a huge saving but still a saving....

Must clean out the pantry so may make that the next Excitement packed Blog...
